Fujian Cuisine

Fujian cuisine, often called Min cuisine, reflects a province of long coastline, river valleys and mountain interiors. Seafood is important, but so are mushrooms, bamboo shoots, pork, noodles and carefully made stocks. Fuzhou, southern Fujian and western Fujian have distinct preferences, so one restaurant cannot represent the whole province. Soup is a major organizing element in many Fujian dishes. Techniques include simmering, steaming, braising, quick boiling and precise knife work that changes how seafood absorbs seasoning. Buddha Jumps Over the Wall is a celebrated Fuzhou banquet soup assembled from numerous separately prepared ingredients and slowly combined in a rich stock. Recipes differ widely and may include abalone, sea cucumber, poultry, ham, mushrooms and Shaoxing wine. Some historic luxury versions used ingredients that responsible diners now avoid for conservation reasons. Ask for the current ingredient list, legal sourcing, allergens, price and portion size before ordering; it is not an everyday single-person soup.

Fuzhou Fish Ball Soup
Fuzhou fish balls are known for a springy fish paste exterior and may contain a seasoned pork filling. Other Fujian fish balls can be unfilled, so the English name alone does not reveal the ingredients. A clear broth lets texture take the lead. Visitors avoiding pork or managing fish allergies should confirm the filling and stock; seeing “fish” on the menu is not enough.

Fujian Spring Rolls
Spring-roll forms appear across China, and Fujian versions vary between cities and families. Wrappers may enclose vegetables, mushrooms, egg, pork or seafood before frying, while some local rolls use different wrappers and serving styles. Treat the dish as a regional family rather than assigning one fixed recipe.
